Coconut Oil Recipes: Veggie Coconut Omelette
Preparation time: 10 minutes Ingredients for 2 servings:
4 whole eggs (free range are best)
4 tablespoons water
4 Tbsp melted virgin coconut oil
1 medium onion
1 red bell pepper
1/2 small broccoli head
1/2 cup chopped parsley, to garnish
salt & pepper to taste
Chop the onion, bell pepper and broccoli and mix in a medium bowl. Beat the eggs with the water in a small bowl, add salt & pepper.
In a medium pan, melt the coconut oil on medium-high heat. Pour eggs into the pan and with a rubber spatula, push cooked portions at edges toward center so uncooked portions can reach hot pan surface, tilting pan and moving as necessary.
Continue until the eggs are lightly set.
Spread chopped vegetables on half of omelette’s surface, and fold over the other half.
After 2-3 minutes, cut omelette in half with the spatula, put each half on a plate, and serve immediately with chopped fresh parsley on top.
