  • ¾ cup low fat, organic, plain yogurt

  • 1 tablespoon ground raw almonds or hypothyroid-friendly hazelnuts
  • ¼ teaspoon cinnamon powder
  • 1 whole free range egg, raw (optional)
  • 10 drops liquid Stevia

1) Put everything (except cinnamon) in a small blender and blend for 30 seconds.

Ingredients for 2 servings:

  • 10 uncooked, peeled and deveined shrimps
  • 3/4 cup coconut flour
  • 1/2 cup coconut flakes (shredded coconut)
  • 2 cups virgin coconut oil for frying
  • 1/3 cup coconut water
  • 1 whole egg
  • a pinch of salt to taste

  • Hot dipping sauce: Dijon mustard, honey, chilli pepper sauce - 1 tablespoon each (you can use Tartar sauce instead, if you prefer)

Coconut Oil Recipes- Deep Fried Coconut Shrimps

Beat the egg with salt in a medium bowl, then mix in 1/2 cup coconut flour and the coconut water. Whisk until you have a thick and sticky batter.

2) Toss the shrimps in 1/4 cup coconut flour, then dip them in the batter making sure they are completely covered.

3) Roll the batter-coated shrimps in shredded coconut, then place them on a plate and put it in the freezer for 5-10 minutes.

4) Preheat coconut oil in a deep fryer, frying pan, wok, etc., on medium-high heat (350 F).

5) When the oil is hot, drop the shrimps in and fry them until they're golden brown - if you're using a pan fry them 2-3 minutes on each side, turning them gently.

6) Remove shrimps from the oil and place them on a paper towel for 1 minute so excess oil is absorbed.

7) Place shrimps on 1-2 lettuce leafs and serve hot with hot dipping sauce - this is one of all-time favorites from all coconut oil recipes simply because most everybody loves deep fried shrimps :-)

Fat-burning Veggie Coconut Omelet

Preparation time: 10 minutes
Ingredients for 2 servings:

Coconut Oil Recipes: Coconut Omelet
  • 4 whole eggs (free range are best)
  • 4 tbsp water
  • 4 tbsp melted virgin coconut oil
  • 1 medium onion
  • 1 red bell pepper
  • 1/2 small broccoli head (or 1/2 cup chopped mushrooms)
  • 1/2 cup chopped parsley to garnish
  • salt & pepper to taste

1) Chop the veggies and mix them in a medium bowl.

2) Beat the eggs with the water in a small bowl, adding a pinch of salt & pepper.

3) In a medium pan, melt the coconut oil on medium-high heat.

4) Pour the egg mixture into the pan and with a rubber spatula, push cooked portions at edges toward center so uncooked portions can reach hot pan surface, tilting the pan and moving it as necessary; continue until the eggs are lightly set.

5) Spread chopped vegetables on half of omelet’s surface, then fold over the other half.

6) After 2-3 minutes, cut the omelet in half with the spatula, put each half on a plate and serve immediately with chopped fresh parsley on top. This is a super-quick, filling, low-carb, fat-burning breakfast (or lunch) - one of the little-known but most delicious coconut oil recipes.
